Baked Sour Cream and Onion Chicken (2)I know the holiday season is fast approaching, and that usually means family parties, music, and fun. But when I think family parties, music and fun, I usually think about summer!

Sure November and December have plenty of those things, but just think: summer concert series, family gatherings, BBQ’s, beach and pool days. All of those things speak to me of summer!

One of the biggest things for me when making summer fun and parties a success is the food! I absolutely love when I serve something that everyone loves from the kids to the adults. And this sour cream and onion chicken is a huge hit amongst the masses.

It is so easy to make too, baked, and easy to serve with fresh fruits, grilled corn, and of course chips! Sour Cream and Onion Pringles® to be precise.

We love having friends and family over for a backyard party. We serve great food, play the music loud, dance, play, and just have a good time.

This summer we took Pringles® cans and let the kids form a band. It was so fun to watch their lack of musical talent. They certainly take after me! Haha. Lucky for me, my kids don’t have to be good at playing music to enjoy it.

This summer, Pringles® unveiled its inaugural Summer Jam for music fans, giving fans exclusive access to some of their favorite artists and really unbelievable music. In conjunction with it, there is a contest. You can enter to win VIP concert experience to the Pringles® Summer Jam for you and a friend. You can find the specially marked Pringles® canisters to get the code, and head to the Pringles® Summer Jam site to get all the details for how to enter. Sweepstakes is open until 7/31/15 at 11:59pm ET. *

While you are there, view the Pringles® Percussion Prodigies video content. Pringles® challenged music sensation M4Sonic and a group of musicians of varying styles and backgrounds – called the Percussion Prodigies – to incorporate the brand’s iconic can into their musical expression. It is so fun! Basically it is a bunch of really amazing percussionists play their sons on nothing more than Pringles® cans! Totally worth the view. And you can make your own musical instrument and share your creations with #PringlesSummerJamSweeps.

But let’s get back to this chicken. It is dipped in a sourcream and egg mixture, rolled in crushed Sour Cream and Onion Pringles® and baked to perfection! It is totally fun, and tastes great!

Ingredients

  • 2 lbs chicken breast
  • 1 large egg
  • 1/2 cup sour cream
  • 1 tsp onion powder

  • Salt and pepper to taste
  • 1/2 a can of Sour Cream & Onion Pringles

Instructions

  • Preheat oven to 375 degrees

  • Portion your chicken as you see fit, I had small children eating, so I cut the breasts into smaller pieces.

  • In a shallow dish, whisk together the egg, sour cream, onion powder, and some milk to get a runny consistency.

  • Put Pringles chips in a food processor, and process until fine. About 30 seconds to a minute.

  • Salt and pepper the chicken, then dip in the egg and sour cream mixture

  • Roll in the chip pieces

  • Place chicken on a baking sheet sprayed with no-stick cooking spray.

  • Bake for 8 minutes, flip, and bake for another 8 minutes or until juices run clear when pierced with a fork (depends on the thickness of the chicken and how small you cut it. If cut into tenders, cook slightly less.
